Yeah any real world version of playing out a timestop scene/scenario with people is going to have to be through hypnosis/mind manipulating substances, or hyperrealistic androids (probably near future with AI improving the roleplay immersion and programmable posing/interaction setups).
The best to mimic the physics-breaking version of timestop where people and objects can be frozen mid-air / impossible poses etc are through VR/AR, which we already have. More advanced/immersive experiences for this type will definitely come, with high fidelity haptic/neural feedback letting you experience different sets of physics rules for your preferred scenarios/settings.
